Sweet & sour buns
Yield: 4 servings
What you’ll need for the bun:
- 4 bread buns
- chicken/turkey meat
- 1 cup spinach
- 1 cup carrots
- chicory in oil (optional)
Condiments:
- mayonnaise
- wasabi
- soy sauce
- lemon juice
- oyster sauce
- tabasco sauce
Begin by shredding the meat into short stripes. In a pan, pour a teaspoon of olive and half tablespoon of oyster sauce and start cooking on medium low. Add the meat and stir to coat it evenly. Meanwhile, add the tabasco sauce. Cook for about 5-7 minutes (but always check if properly cooked).
Wash the spinach leaves and the carrots and dry the excess water. In a bowl, mix them together with soy sauce and fresh lemon (or lime) juice.
Mix 2 tablespoons of mayonnaise with 2 teaspoons of wasabi (you need to feel the kick!), cut the bread buns open and spread the wasabi mayo on each side of the bun.
Fill in the buns with spinach, carrots, meat stripes and if you have access to it, some chicory in oil - I just discovered a delicious brand, Nonno Andrea, and they produce with this magical red chicory with pink peppercorns and clementine - you can still taste the bitterness of the leaves but the clementine covers it with a layer of sweet & sour which I find really unique. This definitely gave the buns a twist!
Serve with some veggies as a side: this time I quickly boiled some broccoli with garlic and chili pepper just to make the plate even more colorful…
