  Yield : 3-4 servings   What you’ll need    - 500g white onions   - 30-40g butter   - 2 tbsp flour   - 1L vegetable stock   - bread croutons   - gruyere cheese   - salt & pepper   - nutmeg  Sautée the onions with butter until they become golden

What you’ll need

- 500g white onions

- 30-40g butter

- 2 tbsp flour

- 1L vegetable stock

- bread croutons

- gruyere cheese

- salt & pepper

- nutmeg

Sautée the onions with butter until they become golden and start “sweating”. Add the flour and keep stirring.

Once the flour is well incorporated, start to gradually add the vegetable stock and cover with a lid. Let it boil for 20-30 minutes at medium-low heat. Add salt & pepper to taste.

In each serving bowl, add a few croutons and pour the onion soup over. Sprinkle on the grated gruyere and nutmeg, and grill them in pre-heated oven at about 200°C.

Serve them hot with additional croutons on top.

Optional: you can set aside half to 1 onion and caramelize it, to garnish your soup.
